Eggs-venture!

What can your chickens do for you? Lots!

Here is a dozen eggs, given to me by my faithful chickens, I already washed one egg, and it will be seen later. If you have your own chickens, like we do, one rule is don't wash them until you're ready to use them. If you wash them, it removes a natural barrier on the shell that keeps bacteria out. Ever wondered why eggs in the store expire in a week or so? That is why, they are washed. Mine aren't, and I keep eggs for up to three weeks in my fridge with no worries.

By the way, you see none of Lizzie's eggs here. She lays very small brown eggs, and for decorating with dyes, they come out funny. But I do like to "blow" those kind of eggs so they are hollow and use them for decoration.

I used a lot of eggs this morning. I had my daily over-easy eggs, with soft yolks, on a toasted piece of whole wheat bread. Breakfast of whole grains and protein, yum!

And then, I started the water boiling, here is that missing egg mentioned earlier. I washed the rest of them, and they are humming away in the boiling water. We have eggs to decorate!

PS I feel so much better since I found the digital camera this morning! Someone tell my husband, he was getting frustrated too!

Grocery store eggs scare me! I heard a stat that like 50% of those eggs are infected with samonella! YIKES!

Have fun dying Easter eggs!

Oh yeah! Thanks Angela, I don't have to worry about my eggs having bacteria. Why? Because I don't wash them. They remain protected by that natural coating that is on them from the hen. I also use them quickly. They don't travel from a farm to a store to my home. They travel 25 feet from my coop to my fridge. Sometimes even shorter. More than once I have gone to the coop, gotten eggs, and put them in a recipe right then and there. Nice!
